
It’s the tail-end of rhubarb season, but there’s still time to cook up a batch of this delicious syrup and be on your way to a refreshing summer drink.
Rhubarb Soda (adapted from culinate.com)
1 1/2 cups rhubarb, coarsely chopped
1 cup sugar
1 1/2 cup water
sparkling water or club soda
Simmer the rhubarb, sugar and water in a small saucepan for about 15 minutes, until the rhubarb pieces are very soft and the liquid is pink. Cool the syrup, then strain into a jar. (This syrup can be kept in the fridge for a few weeks.) To complete your soda, simply mix your rhubarb syrup with soda water to taste, then pour over ice.
Many years ago as a youngester, my grand mother always kept a bottle of Rhubarband Soda mix in the refridgerator and when any of the family had an upset stomch they were given a table spoon of Rhubarb and Soda which either calmed ones stomach or made you upchuck what was causing the upset stomach. A great mix and I use to be able to purchase same from a local independent pharmist who use to order same for me. But the company who use to sell the mixture stopped and I’ve researched on the Net many times trying to find some outfit that still offered this wonderful mix.
